INSTRUCTION

FOR BAKING FROZEN PATTERIES ON A CONVECTOMATE

 

Defrosting(thawing) of frozen pies(banitsa)- consists in the gradual increase of their temperature.

  1. Defrosting takes place after the products to be baked have been released from the packaging and placed in baking trays.

- at room temperature for 30-60 minutes.

  2. It is not allowed to re-freeze already thawed product.

Baking

  1. In the oven preheated to 200-230 ° С, load the trays with the pies arranged in them.

  2. The time is determined by the amount of pies loaded for baking and can be from 15 to 20 minutes.

  3. Bake until the top and bottom of the pies turn golden yellow to yellow-orange.

Recommended mode of baking pies (banitsa) in convectomate:
Baking without a fan

STEP1- 2 minutes, 200 , STEAM(300ml)
STEP2- 10 minutes, 215 , STAM ( 0 ml)
STEP 3 – 1 minute, 200
, STEAM (300ml)

Baking with 25% fan on

STEP1- 2 minutes, 230 , STEAM(400ml)
STEP2- 7 minutes, 205 , STAM ( 0 ml)
STEP 3 – 6 minute, 190
, STEAM (350-400ml)

 

Aim for a slightly golden color, not a tan. A burnt crust is an indication of elevated levels of acrylamide (a proven carcinogen) in food.

It is not allowed to re-freeze already thawed product!
